Durum wheat is genetically distinct from common wheats, and more closely related to “ancient grains” such as spelt and emmer. Grown for millennia from the Fertile Crescent to Italy, durum (Triticum turgidum) is prized for its high protein and drought tolerance.
Durum Iraq is a landrace (heritage) variety that offers a softer, more workable gluten quality than modern durums bred for industrial pasta manufacturing. This workability enables Durum Iraq to be used for everything from breads to traditional Italian cookies, as well as fresh pastas. With its golden color and high protein, our whole grain Durum Iraq brings rich flavor and nutrition to baked goods as well as pasta.
