WB9229 is a modern Hard Red Spring wheat first offered for sale in 2012. It was bred to thrive in California’s Central Valley, for its disease resistance, and importantly, for its superlative qualities as a bread flour. Artisan bakers who work with WB9229 agree: it is one of the best wheat varieties for bread making. Despite its relatively low protein, this organically grown 2019 harvest scored exceptionally well in CA Wheat Commission baking trials.
