Blended from 60% Patwin white wheat and 38% Yecora Rojo hard red wheat flour, along with 2% “Capay Rye” malted rye from our friends at Admiral Maltings. Red Bug (named for our indefatigable 66 year old Allis Chalmers SP100 combine) is a flavorful, high performance whole grain flour blended to create exceptional sourdoughs. Sonora brings lightness for a wholegrain flour, the hard red wheat lends strength and depth of flavor, and the chit malt promotes lively fermentation and dark, crispy crusts.
